Ingredients
  

  • 320 g Busiate
  • 3 teaspoons Grated botargo
  • qb Evo Oil
  • qb Parsley
  • 300 g Cherry tomatoes
  • 1 clove Garlic
  • qb Halls

Instructions
 

  • Heat a little EVO oil in a frying pan with a clove of garlic, and when the garlic has taken on flavour, add the cherry tomatoes and cook for 5 minutes.
  • In a pot, cook pasta in salted water and once drained al dente, add the cherry tomatoes.
  • Finally, continue by adding 3 teaspoons of grated tuna roe and a handful of parsley.

Notes

The main ingredient of this first course is undoubtedly tuna roe, which determines its flavour. Tuna botargo is a highly prized foodstuff that is obtained from tuna roe that is salted and then dried. Its flavour is strong and tasty at the same time.
