Busiate with tuna botargo
Busiate with tuna roe and cherry tomatoes are very simple to make but the result will be truly extraordinary.

Ingredients
- 320 g Busiate
- 3 teaspoons Grated botargo
- qb Evo Oil
- qb Parsley
- 300 g Cherry tomatoes
- 1 clove Garlic
- qb Halls
Instructions
- Heat a little EVO oil in a frying pan with a clove of garlic, and when the garlic has taken on flavour, add the cherry tomatoes and cook for 5 minutes.
- In a pot, cook pasta in salted water and once drained al dente, add the cherry tomatoes.
- Finally, continue by adding 3 teaspoons of grated tuna roe and a handful of parsley.
Notes
The main ingredient of this first course is undoubtedly tuna roe, which determines its flavour. Tuna botargo is a highly prized foodstuff that is obtained from tuna roe that is salted and then dried. Its flavour is strong and tasty at the same time.
